rtc-pcf8563-guf: Rename the compatible entry

Jonas Höppner requested to merge rename-pcf8563-guf-dt into dunfell

To be more compatible to the older OSes and the Flash-N-Go System bootselect tool we need to have the name of the driver instance to be pcf8563. So rename the compatible entry in the Garz & Fricke version of the driver and use the company prefix "guf" instead.
