configs: enable CONFIG_VERSION_VARIABLE for tanaro and trizeps

Martin Oemus requested to merge add-u-boot-version-to-environment into guf_imx_v2020.04-trizeps8plus_2021_12_07

This results in U-Boot setting the envrionment variable "ver" to the values of its PLAIN_VERSION symbol. This variable can then be used in the boot script to set it in the device tree.
