[DOC] Update documentation and minor fix

Lorenzo Pagliai requested to merge lpag/doc_update into kirkstone
  • Remove explicit reference to Intel Apollo Lake specific CPU type since currently other Intel CPU types are also supported (Elkhart Lake, Tiger Lake) and others will be included in the future.
  • Remove explicit reference to supported boards in the 'soc' section READMEs and included reference to the GitLab Release.
  • Minor style fixes.
