[OS-RELEASE] Update `IMAGE_ID` and `IMAGE_VERSION` values

  • The variables need to be updated just before a new Clea OS software release is created in order to match the tag of the new release.
  • Update the version to match the new 'kirkstone_1-07-00' tag
